The performance-talk A Steakhouse In Upstate combines experiences of being a server in fine dining and a bartender for an elite cocktail bar with aesthetic theory and ideas of ‘immaterial labor.’ The talk arrives at a new understanding of aesthetics of performance for today’s increasingly automatized existence.
